Mint Chocolate Brownie Bites

These tiny little bites of goodness will check all your boxes!

Not only are they chocolatey and flavourful, they are filled with protein and sweetened with dates instead of refined sugar.

The best part is, they are no bake so even the youngest of children can manage this one with a little help.

Prep Time: 20 mins

Ingredients

  • walnuts

  • pitted dates

  • cocoa powder

  • vanilla

  • peppermint or mint extract

  • salt

  • Food Processor

  • spatula

  • measuring cups and spoons

  • bowl

  • cookie sheet

  • parchment paper

Instructions

  1. Measure out each of the other ingredients in separate bowls.

  2. Place the walnuts and dates in your food processor. Pulse until combined.

  3. Add the rest of the ingredients to the food processor and pulse again until the mixture comes together and forms a sticky substance. If it feels a bit too dry, add a tbsp of water.

  4. Place parchment paper on a cookie sheet and then using a small scoop, scoop out one level scoop of dough and place into your hand.

  5. Roll into a ball and place on the tray.

  6. When they tray is full. chill for 20 minutes or so.
